Red Pepper Hummus

How many meals do you eat alone compared to those when you have some kind of dining companion.  While there are exceptions the majority of meals are eaten communally, and the proportion of meals eaten with others increases exponentially as the day goes on. You might have breakfast with your wife or kids, but they are almost certainly there at supper.

When you think of a dining companion what comes to mind: someone to sit down and have a formal meal with, or just someone to share a bowl of chips? If the latter fits your description, this week is for you. Many times I have shared a spread of food, often centred around a sporting event, with those who are close to me.

There are many foods suitable to casual environments. From a spread of chopped vegetables, to cubed meats and cheeses, chips have become available in a range of flavours, textures also vary a great deal. Who dares serve chips; potato, pita or otherwise, without a great dip?

This week I am taking my inspiration from the middle east. Hummus is a largely popular, highly customizable dish made from a base of chickpeas and lemon juice. This take offers a little more spice, and an interesting sweet note from red peppers.   A touch of garlic helps to add a touch of spice to the dish.

Ingredients:

½ can of chick peas

¼ cup lemon juice

1 chopped red pepper, skin removed

¼ cup olive oil

2 cloves of garlic

2 Tbsp. Tahini paste

Recipe:

  1. Combine all ingredients into a large bowl or food processor
  2. With a food processor pulse regularly until mixture has fully combined or mix with an immersion blender until uniform in consistency.
  3. Plate in a shallow bowl or other serving vessel.
  4. Serve alongside your choice of chips, vegetables or other dippable foods.

From the board room to the dorm room hummus is an excellent group snack that is a part of any great spread.
