Have some fun with your Frittata!

If you are anything like me you not only strive to eat better, but also find ways to limit if not eliminate your waste at the end of the week. Having a few tricks to reinvigorate the weeks’ remains will not only cut down on your food costs but also offer new customizable dishes to be called upon when necessary.

Everyone knows casserole. Take some pasta, some sauce, top with cheese and whatever else you have to throw into it for an easy meal. While the premise is simple enough, the dish has a tendency to get old…quickly. Utilizing a few key concepts from the classic casserole can open our minds to opportunities that may be sitting right in front of us.

Finding neutral flavours, or those that can accent others pleasantly is at the core of any leftover dish. Pasta, rice, eggs or grains can all offer a bland backdrop for a mouthwatering mound of enhanced edibles. So let’s pick one and get on with the recipe will we! Eggs.

Recipe:

  1. Take six eggs or more, beat them together.

 

  1. Add leftover vegetables, meats or other fridge mates from the past week.

 

  1. Start in an oven safe pan on the stove. Medium heat and a touch of fat (butter or oil)

 

  1. Pour ingredients over top, I also add a layer of cheese on top for additional flavour, but it is completely optional.

 

  1. Once the mixture begins to set, put into a pre-heated 350 degree oven for roughly a half hour depending upon the size of your dish.

 

  1. After dish has cooked through, remove from oven, slice pie like and serve hot.

This dish, known as a frittata, is an excellent option for group gatherings regardless of the time of day. Eggs are typical breakfast food but who cares, eggs are great anytime of the day. There is a reason why so many places offer all day breakfast.
