Split a Scoop or Two with some Summer Sweetness

Have you noticed how you never attempt to rush something you enjoy? It seems like everyone is going away, or doing something this time of year; the mad dash before school starts and we all go back to our normal grind. Summertime socialization often includes a frozen treat of some kind, what’s yours?

Sugar, ice and summer. They come in various forms but we all have our own associations. Did you go to the store with a dollar to get a freezie, maybe it was you and your family heading out for ice cream. Perhaps it’s the memory of a first date, that awkward getting to know you phase, always easier with ice cream.

As we get older our tastes mature, I find myself going for more fruit and less hot fudge these days. Working fruit into a dessert is not always a bad thing, however this is not going to turn into a “look at how healthy your chocolate ice cream can be with one cherry” kind of an article.

The Banana split does however have some key advantages over a plain scoop of ice cream or two.

Ingredients:

1 banana, cut in half

2 scoops cookies and cream ice cream

¼ cup each, chopped strawberries and blueberries

50 grams melted milk chocolate.

Directions:

Place banana pieces in bottom of bowl

Scoop ice cream into centre of bowl, top with fruit

Warm and drizzle milk chocolate as desired over dessert.

Serve.

Take in some of the last sunsets of summer with something sweet. The complex balance of sweetness in this dish along with the textured cookies and cream ice cream will leave your taste buds far from bored.
