Tropical Flavours & Summer Chili

It seems odd when you factor in how active we are through the warmer months how summer fare is notoriously light in texture, and more often then not light on flavour as well. Food, at its most basic level, is nothing more than energy to run our bodies. Would it not make more sense to have heavier meals at a time when we most active? Citrus says summer, mix in a cooling herb or two and you’ve transformed an entire dish. With a few alterations to this cool weather classic a summer chili has everything your body needs to keep it going: be it at the park, on the track or in the pool.

Ingredients:

¼ cup diced carrots

¼ cup diced celery

¼ cup cooked navy beans

½ lb. ground beef

2 cups vegetable stock

1 oz. lime juice

½ cup chopped cilantro

 

Directions:

Brown the ground beef in a large pot.

Add the vegetables, cilantro, beans lime juice and stock to the pot and cook on medium heat for 20 minutes, or until the vegetables are fork tender.

Serve hot, garnish with fresh cilantro if desired.
