Sweet Blackberry Salad

One of the biggest joys of summer eating is its freshness, taking advantage of natures’ bounty at a time when it is best. If you are anything like us fruit makes up a large portion of our diet during this time of year. For any health conscious individual balancing fruits and vegetables is one of the keys to a great summer salad, and this salad is no exception. With a slight, yet solid, base of spinach and topped with sweet blackberries, a savoury note from red onion and a few spots of creamy greatness brought to you by goat cheese this is a balanced summer sensation. A sweetened balsamic reduction is as close to a perfect summer dressing as you can find for a fruit featured salad.

Ingredients:

2 cups spinach – washed

¼ cup red onion – chopped

¼ cup blackberries

25g. goat cheese, hand broken into knobs of cheese

10-20 ml. of sweet balsamic dressing

 

Directions:

Build a foundation of spinach on the plate

Sprinkle remaining solid ingredients evenly on top of spinach.

Drizzle the dressing onto salad from a height. Serve.
