Date Night Indulgences at Home

April showers may bring May flowers, but most of us simply want to get out for an enjoyable time before cabin fever really sets in. From board games to almost everything on television indoor activities have been all but exhausted by now. A date night at home with your significant other or a new special someone can be an easy way to look forward to yet another night in. When trying to show your true feelings it is time to go out of your comfort zone and really impress with some of those goods we typically pass over for one reason or another.

Looking at lamb there are a number of options and cuts to choose from. Leg of lamb, ground lamb, rack of lamb, lamb chops; there is even an option for mutton. There is spring lamb, lamb, and mutton but what are the differences? Which one should be chosen? Spring lamb, lamb and mutton define the age of the animal at slaughter; Spring lamb is three months old, lamb can be up to a year and mutton is older than one year. The cuts are very simply different pieces of the animal. While each cut, and type of meat will offer variable options for our purposes today we will be looking at a rack of lamb.

1) Score the top of the rack of lamb (fat) to help speed up the rendering process.

2) Blend ½ tsp. celery salt, ¼ tsp. pepper and large pinch each of thyme, garlic powder and rosemary.

3) Spread spice blend over the lamb rack and pan sear the lamb in a pan over medium high heat.

4) Transfer lamb rack to a pre-heated 375 degree oven for 20 minutes.

The oil spattering, the fat rendering, the spices mixing together to aromatically infuse the entire kitchen; enjoy it all. For this savoury, full flavoured dinner for two was not cheap after all. The time, patience and attention to detail put forth in this dish will surely show that special someone just how much you care, and how good you are with your hands. Once you know the basics any dish that was once thought to be too difficult can become one of laughter and joy that you do not have to go out to enjoy.
