Spicy Bacon Wrapped Scallops

Holiday and party season is here again! The cooler weather alongside our first dusting of the white stuff has everyone thinking of gifts and gatherings that will undoubtedly make an appearance this time of year. Regardless of the setting there seems to be an overwhelming onslaught of social engagements this month, and bacon wrapped scallops seem to offer something for nearly everyone.

When in party planning mode, meals are rarely part of the mix. Rather, a smorgasbord of finger foods seems to fit the bill. When hosting, the flow of the evening is key and with sample-sized selections of various goods allows your guests to freely shift their attention from that amusing story from grandpa’s childhood we have all heard year after year to those reminiscing about those stories that are a little more entertaining if not relevant. The odd guest may even saunter into the kitchen to see what the next palate-pleasing piece may be soon on display.

1 Lb. 20-40 scallops
½ Lb. thin cut bacon strips
½ cup Old Bay seasoning

While allergies are always a concern whenever guests are involved, this simple spicy scallop is sure to be a hit this holiday season. Roll scallops in Old Bay Seasoning, ensuring full coverage. Cut the bacon strips in half and wrap each half piece around the scallops. At 425 degrees place the bacon strips on a baking sheet and into the oven for 15-20 min, or until bacon reaches desired crispness.

When the sweetness of the scallop is met with the unmistakable smoky and salty bacon it is something to be considered classically brilliant. With the addition of the warm blend of spices that Old Bay brings to the party seems to elevate the finger fantasy to all new heights.

The simplicity of this dish makes it an instant go to for us. 10 minutes of prep time is all you need to have the ability to say “I made them myself” and be the envy of your guests this season. Whatever you decide to include on the spread of goodies this year, these bacon wrapped scallops need to be on there. So go out, get your hands dirty and bring this specialty home this holiday season.
