Slow Cooker Pulled Pork

I want some meat! As the temperature continues to drop we all have our own ways that we adjust our eating habits. Rarely will you see ice cream in February, and hot chocolate in July is just as scarce. With the onset of November comes a culture shift from fall to winter. Traditionally November brings with it a number of firsts. The first cold winds, occasionally the first frosts, and even the first snowflakes of the season. It is the time of year when we all discover our old winter-wear, and winter habits.

Have you ever noticed how with rare exception the foods we eat are often in contrast to the weather? Soups, stews, root vegetables and additional helpings are all a large part of this time of year.

Take it inside. While to some pulled pork is a strictly summertime staple to some people the simple pulled pork has its place in the cold months as well. From the barbecue to the slow cooker, or maybe even the oven, there is just something about coming home on a cool November evening and having something warm to greet you at the table.

Recipe:

Ingredients:

3 LB pork roast

2 Bay Leaves, 1 segment of garlic, minced, 1 tsp. onion powder

1 jar of barbecue sauce

Kaiser or hamburger buns

Cheese (optional)

 

Instructions:

  • Place the roast into the slow cooker along with enough water to partially submerge the meat. (As you would do for an oven roast)
  • Add spices
  • Set on low for 8 hours
  • Tear apart meat into strands using forks or other utensils
  • Mix well with desired quantity of your favourite barbecue sauce
  • Toast buns (optional)
  • Serve with cheese and sides as desired

While it may not offer the same nostalgia of a roast beef dinner this pulled pork meal is an excellent way to get a weekday meal onto the table. As the colder months begin to creep around the corner we all find our own fun ways of working around the weather. For you it may be board games or movie nights, but if you have read this far it is more likely you fight back with hot beverages and healthy home cooking.
