Delicate Deliciousness: Saffron Mint Cream Sauce

As the temperature rises eating habits tend to lighten; salads, delicate flavours and mild sauces all begin to show up on our plates. This mild mannered cream based sauce is best paired with mild meats and seafood. The unique floral notes of saffron couples with the cooling nature of mint to make this an excellent cream sauce for summertime.

 

Ingredients:

1/4 cup water

1/2 cup half and half cream

Lg. pinch saffron

3-4 mint chopped fresh mint leaves

Salt to taste – we recommend 1/8 tsp.

1 Tbsp. corn starch.

Directions:

On medium high heat bring water to a boil and add saffron, reduce water by half.

Incorporate cream and mint into saffron water, let simmer for five minutes.

remove 1/4 cup of liquid from pot and stir in corn starch, once fully dissolved pour into sauce.

stir regularly until desired thickness has been reached, add salt to taste.

Keep warm, serve.
