Cod In a Blanket, A Bacon Blanket!!

Protein is a key ingredient in most diets, however there are a number of different sources for this dietary building block. Beef, chicken, fish, or legumes can all be used to provide a high dose of protein.

When worrying over a healthy lifestyle for you and yours time and time again the easiest option always comes back to variety, and yes even fat is part of a healthy diet. For years now we have all been told to eat more seafood and had the benefits listed almost constantly. So why not combine the two: surf and turf.

The term surf and turf, for most of us, brings up images of such classics as T-bone steak and lobster or a fillet mignon with shrimp. There are other, lesser-known ways to combine the bounty of the sea with a meaty morsel and for today we will be looking at one; Bacon wrapped cod fillet.

While this recipe does call for some preparation it goes a long way in pleasing even the most challenging of pallets.

1) In a bowl generously coat the cod fillet in a dry Cajun style seasoning such as Old Bay or your favorite chilli powder and half a teaspoon of sea salt.

2) Weave 5-6 strips of bacon together and place the cod fillet (or portion thereof) in the middle of the weave.

3) Fold the bacon over the top and secure with toothpicks, if required.

This recipe can either be done on the barbeque or in the oven. Depending on the size of each portion allow for up to 20 minutes at 350 degrees to cook the fish through. Possible sides for this dish are quite plentiful; Potatoes, brussel sprouts, vegetable stir-fry or even simple frozen vegetables can complete this meal with ease.

The versatility of cod, due to its’ mild flavour, allows it to take on any taste you wish. The combination of a mild spiciness, the unmistakable smokiness of bacon and the firm white flesh of cod in this particular recipe should surely have something for everyone.
