Classy Breakfast Leftovers

Awakening in the spring is an outright joy to us morning people. As you stretch and wipe the sleep from your eyes, listening to the birds chirping and the flow of morning traffic softly drifting through your window. Those seemingly timeless moments between awakening and realizing what all you have on the to do list today. For most people, on an easy-going morning, what to eat and feed the others in the house shortly becomes of primary concern; they say breakfast is the most important meal of the day after all.

Cereal these days, while simple, seems to be falling out of fashion. The workweek meals of coffee and a bagel as you dart out the door to make that morning meeting for some reason, does not feel adequate, on this particular morning. Eggs: bacon and eggs, not today. But eggs, omelettes are an excellent option. The soft, flavourful, blankets of egg stuffed with whatever your heart desires. From a simple egg and cheese to smoked salmon, or even a veggie packed garden-variety omelette, all viable options.

This week a cornucopia of leftovers overflows our refrigerators’ drawers and trays and it seems time to use some of them up. Some chopped tomato and onion from taco night, a good portion of some artisinal style cheese that was purchased on a “this could be different” whim, and two dozen eggs…were they on sale?

3 Large Eggs
Handful each chopped tomato, chopped onion
75 g Derby Sage cheese
½ Tbsp. Old Bay Seasoning
pinch pepper

Beat your eggs in a bowl until it forms a uniform consistency. Melt a teaspoon of butter in a non stick pan over medium heat. Once the butter is heated pour the beaten eggs into the pan and leave it alone for a minute or so, until a skin begins to form on the bottom of the pan. At this point, using a plastic utensil such as a spoon, pull from the outside in along the bottom of the pan and swirl the pan as to recreate a solid base. Add the vegetables, cheese and spices at this point. Leave the eggs alone until the bottom of the egg sets up and begins to brown. Then slowly and carefully lift one side of the egg and fold it over the other half. After a minute or two plate and serve, being careful not to be aggressive and risk breaking the egg. Another option would be to simply slide the omelette directly onto the plate.

While omelettes can seem challenging, in reality they are just eggs. If it does not turn out you can always end up with a custom version of scrambled eggs. For a change, on a low key day, an omelette for breakfast can offer a creamy, soft touch of elegance that can leave you satisfied well into the afternoon.
