Whole Grain Mustard Crusted Salmon

Pan Fried, baked, barbequed or otherwise salmon is one of the most popular fish on the market today. While tastes are as personal as clothing or hair styles, the fact that salmon is one of the most flavourful fish makes it an understandable first choice for most people. When creating spice blends or flavour combinations consider potent spices such as cayenne, garlic powder, or rosemary to provide a pleasurable dish for all to enjoy.

A favourite of ours is the salmon fillet with Old Bay seasoning and whole grain mustard. This dish is heavily seasoned and will certainly awaken your taste buds. In a preheated barbeque place the salmon skin down and apply a generous amount of Old Bay seasoning to the meat of the fish. This spice will add notes of salt and a mild heat to the fish and should be adjusted for personal tastes. After approximately five minutes the seasoning has had some time to sink into the salmon and now it is time to layer a tablespoon of whole grain mustard over top of the fillet. The main work is now complete, close the lid on the barbeque and let it continue cooking for about ten minutes or until desired doneness is achieved.

There you have it, one great salmon fillet that is sure to please you along with any other guests you may have around your table. The question still remains what should be served alongside the fish since no matter how great a lone salmon fillet rarely makes up a full meal. White rice prepared with rosemary and black beans can offer a flavourful side that also offers simple contrast on the plate. A small ceasar or garden salad can also be served as an appetizing addition.

This dish does take a little more effort then a simple sandwich however it is in no way an hour-long endeavour.
